{MONDAY'S MENU} PW's Asian Noodle Salad

So, I found my camera this morning. Wouldn't you know, it was in the back of my Excursion...right where I would have had access to it all weekend. Hmmm, I know, GENIUS!

So this is a salad that I saw on ThePioneerWoman.com. I just had to try it! Word to the wise...don't try to make this when you have 15 extra people in your house, you have been up until 2am every night and up at 6:30am, and you are so tired and unable to focus on any one thing for longer than about 30 seconds! If, like me, you are NOT WISE...just go ahead and plan a couple of hours to make this! The WISE...probably about 20 or less! Oh brother!

Oh, one more tidbit...I didn't use fresh ginger root, I used dried...don't do that. It was good, but I can imagine it was supposed to be better. The dried stuff WAY to over powering. Also, don't skimp on the Sesame Oil. It cannot be substituted for another type. Well, it CAN, but it isn't nearly as good! Now lets get to this shall we?!

PIONEER WOMAN'S ASIAN NOODLE SALAD

INGREDIENTS:1/2 to 1 head sliced Napa cabbage
1/2 to 1 head sliced purple cabbage
1/2 to 1 bag baby spinach
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 orange bell pepper, sliced thin (if available)
1 small bag bean sprouts (also called “mung bean sprouts”)
3 sliced scallions
3 peeled, sliced cucumbers LOTS of chopped cilantro—up to one bunch
1 can whole cashews, lightly toasted in skillet


Add: 1 packages linguine noodles, cooked, rinsed, and cooled
And mix it all up really good! Pretty isn't it?!


DRESSING INGREDIENTS:Juice of 1 lime
8 tablespoons olive oil
2 tablespoons sesame oil
6 tablespoons soy sauce
1/3 cup brown sugar
3 tablespoons fresh ginger, chopped
2 cloves chopped garlic
2 hot peppers or jalapenos, chopped
More chopped cilantro—LOTS

*Whisk this all together


Pour over salad and mix with tongs. Serve in a HUGE bowl or on a platter. This is one seriously huge salad!

This is a delicious salad. Lots and lots of chopping...but well worth it. And I agree, fresh ginger is a must!

Did you love my polite comment =)? No seriously. It was GOOD! I even ate ALL of it. I didn't pick anything out. (uh-hmm) Not like anyone picked anything else out of any of the other salads =)

Kristin! What could you have picked out? It was all cabbage, peppers, spinach and other delicious-ness! Did you see one single bleedin tomato?? NO! Of course not! Why, because they are evil! Unless they are sauce-d or salsa-d or any other form other than fresh yuckiness, they just will not make it into my mouth!

In all fairness, my love, I did warn you that I wouldn't be eating them! The rest of the salad was DEELISH! Thanks! :)

I love this salad. I have to admit that when I made it I doubled the dressing recipe. So YUMMY.
