MONDAY'S MENU {German Pancakes} Also known as "Marsmallow Mountain Panpakes"

Oh bless my hubby for remembering the existence of this delightful dish! I had forgotten how much we all LOVE these babies! Thank goodness he remembered and whipped them up for us the other day! They were SO yummy and the process of getting Mallory to try something new actually proved to be quite entertaining.

How fun is that?!

Now, I was trying to get a good shot of Jake enjoying his pancakes. I took a bunch of shots. All along not noticing Mallory's reaction to all of it. German Pancakes were new to her and she DOES NOT trust new....unless it looks like you just picked it off a plant. She was freaking out about them smelling like eggs. Yes, they have a lot of eggs in them actually. That is not a bit of information I was willing to give to her royal pickyness. She was going to have to deal! She didn't need to know ingredients, just that they were YUMMY!

When I was looking through the pics to post I was totally laughing HARD! Check out the sequence below. Look at her little face! Can you see the turmoil? She may have been afraid for Jake's life at first, then maybe totally grossed out, then perhaps fearful that she may actually have to try them. In any case, she cracks me right up!

And then, my son the genius, turned to his near tears sister and said, "Mally, look! They are Marshmallow Mountain Pancakes!" Well that did it! She let out a giggle, picked up her fork and then......

HOLY SMOKES! It's a miracle! AND she liked them! And in our house, they are forever dubbed as "Marshmallow Mountain Panpakes"
{Panpakes is a word I do not EVER care to correct! I LOVE that she says it! I hope she never changes it!}

INGREDIENTS:
  • 2 T Butter
  • 1 1/2 c. Milk
  • 3/4 tsp Salt
  • 6 Eggs
  • 1 1/2 c. Flour
DIRECTIONS:

Blend all ingredients, except butter, until smooth. Preheat oven to 450 degrees and melt butter in 9x13 pan. Lightly spray pan & then pour batter where the butter has been melted. Cook 17-20 min or until it looks a bit like the picture above. Serve with syrup or jam. Syrup is our favorite with this one!
