So, this is one of my VERY favorite things! Please try this one! You will love it! I may have posted this before, but I couldn't find it and frankly, it bears repetition! This one is another GOODY from my mom's kitchen. It is the most tasty, most satisfying meal AND it is SO good for you! It is also made up of just about everything you will already have in your house and makes for GREAT leftovers!
One of my favorite ways to serve this is to cut a really wide opening in a pumpkin and carve it out REALLY good. Then just before serving, pour the soup into the pumpkin! SO PRETTY! Bread bowls...if I liked bread...would be good with this too. Alright, let's get to it, shall we?!
HEALTHY HARVEST SOUP
Let's start by chopping an onion...you may call me slow...I deserve it, but PW did a "tutorial" on how to quickly chop an onion, and what do you know....AMAZING! So now I will show you!
Cut the ends off your onion and peel the skin off. Cut it in half. Lay the half on the cutting board and cut it into slices like this...
Now throw 2 lbs. ground turkey breast, 1 onion, chopped & 2 cloves of garlic, chopped, into a large pot. Brown. Drain (if needed).
You will need 2 cups chopped carrots, celery and potatoes. I use the red potatoes so I don't have to peel them. Plus, I like them SO much more! Then throw a can drained corn into the mix.
Now gather 1/2 c. minute rice (I use brown), 3/4 tsp pepper, 1/2 tsp parsley flakes, 1 tsp. salt, 1/2 tsp basil leaves & 2 bay leaves
Bring to a boil. Cover and simmer for 20 min.
Cover and simmer for 10 more minutes.
Serve and ENJOY! This truly is heaven! Not to mention, there aren't words to describe how good your house smells while you are cooking this! It is AMAZING! Oh and don't forget to let it cool. I hate when you burn your mouth so bad you can't taste anything for the next week! :)

Add (2) 15 oz cans of tomato sauce and give her a good stir. Dump all of that into your pot with your browned, drained meat. Add 6 tsp. instant chicken bouillon granules & 6 c. water.While that is browning you can get to chopping some veggies! Notice the knives? Yeah, I love em! They are super SUPER sharp and make everything SO much easier! Look how lazy I am with cutting my carrots! Line up as many of those babies as you can and just get the job done!

that looks delicious Amy! great pictures too, looks like you're going to be the next pioneer woman! We are living with my inlaws and I am doing all the cooking...she is on weight watchers so all my meals are healthy but good. I will try and post what I have been making soon!
Maybe if I started taking pictures while I cooked I would want to cook a decent meal for once in my life..I'll try it!

Yea! A recipe just for me! I will be trying this one as soon as I go to the store, I should have these things, but I'm mising a few. We have also been on weight watchers. It's hard to find good healthy recipes that we like. I miss cooking all those yummy hearty feel good recipes I'm used to.

You cook??? You'd be a hit at my house! I think we're going for easy tonight (and most every other night, if the truth be known); nothing like french bread sandwiches for a quick clean up.
