another {MONDAY'S MENU} Moon Cake

If you like Eclairs (and who doesn't) then you will LOVE this! It is a flat out version of an Eclair. Another FABULOUS recipe from my mom! This is ALWAYS a hit and SO easy and SO SO SO yummy! You MUST try this one!




MOON CAKE

In a sauce pan, melt 1 stick of butter in 1 cup boiling water. Add 1 cup flour and 1/4 tsp. salt. Cook, stirring vigorously, until mixture is smooth and forms a soft ball. Cool slightly.




Then you plop said ball of stuff into a mixing bowl. Add 4 eggs, one at a time. Beat until mixture is smooth.




Got it so far? Not too bad right?!


Now flatten mixture onto a cookie sheet. Have I told you how much I LOVE stoneware?! It is from Pampered Chef and it is DIVINE! If you want some, give me a hollar! My (Ryan's, but I totally claim her as my own) Aunt Cindy can hook you up!

Now pop this into a preheated, 400 degree oven. Cook for 20 min, or until just starting to turn a little goldenish.

Now mix (2) 3.4 oz packages of French Vanilla Instant pudding according to directions.

This stuff has the consistency of...well, I don't quite know how to explain it. It is chewy, but not. All I know is that it is FANTASTIC! It is JUST like the pastry of an eclair! SO good!

Ok, now you are going to chuck a package of Cream Cheese (I used 1/3 less fat. It is the same consistency, with 1/3 less guilt) into the mix. Let this mix in all the way.




Until it looks like this! YUM!




Now spread that mixture over the top of your pastry.




Then spread an 8 oz container of Cool Whip on top of that!

Then drizzle the whole thing with Chocolate Syrup. My mom sprinkles slivered or sliced almonds on the top. I know that she considers it blasphemy that I did not. I AM SORRY MOM! I didn't have any! It was REALLY good without them too! :)

This is one of my favorite desserts. You MUST try this one. It is so easy and SO good! Let me know how it turns out!
TAH DAH...and this people, is why it is called Moon Cake! All of that batter rises and then when you take it out of the oven it collapses in some spots. Kinda looks like the surface of the moon huh?! Oh, you have never been there?...Well, technically I haven't either, but well if you want to get all technical I am sure we can call up ole Neil Armstrong, if you wish! Otherwise, let's get back to this, shall we?
