{MONDAY'S MENU} Freezer Jam

It is that time of year! Time to start thinking about all the wonderful fruits and veggies I can can! My BFF Courtney and I canned SO MANY things a few years ago. Needless to say, with all that is involved with premature twins (not to mention living in a hospital for 8 months) I haven't really had the opportunity to do much since then. SO I am excited to get back to it!
For Enrichment Night a couple of weeks ago we taught about Food Storage and made some freezer jam for everyone. It was totally motivating for me to get back to it! So, after a Costco run (the local Strawberry Field is not quite ready for picking) I had plenty of Strawberries and apricots, and then in about 30 min. I had TONS of jam! YUMMY!
So, today's recipe resides in a box of pectin! Go get some of your favorite fruit and a box of pectin and VIOLA!
Well, I guess I should also mention sugar! OH MY SUGAR! I am now going to search out the best jam recipe that doesn't require more sugar than fruit! YIKES! I will let you know when I find one! :) Until then, pop some homemade bread in the oven (or bread maker) and have a little treat!

So how did I miss the freezer jam part of the food storage enrichent night? Or was that another one and I am just totally out of the loop? Oh, and we have a local strawberry field? Seriously, I need to get out more!!!!! =)

You ARE out of the loop Kristin! Maybe next time you will think twice before galavanting off on some cruise! SERIOUSLY!

You were somewhere in Mexico during our little Jam making session and don't you worry as soon as the Strawberry Field is ready we will make a trip to Jerome to pick some!

One of my favorite things, honestly.
I just made another batch last week, I love it!! Silly but I love to see it all lined up there in my freezer, don't you?!

PS. Forget about the bread, vanilla ice cream...mmmm!

There's nothing better than a line up of pretty much anything you've put up yourself... it makes you feel so... efficient!

And there is totally low-no sugar pectin and it's actually really good. I think it's Sure-Jell brand. You have to be super careful to follow directions and it still might not set up super good. But when it works, it works and it tastes like fresh berries. Kevin doesn't like it as much, but please, he likes syrup. YUCK!

...btw I would love to live in Idaho we lived in Nephi for a year and Greg couldn't take it he had to get a job in Salt Lake.

What a great idea!!! I would love to make some jam. I just might have to get the recipe from you as soon as we move. :)
Can you use Splenda for it?!?! Not sure if it is good, but just a thought since you say it calls for so much sugar.

And yes, I LOVE to see all the jars and whatever else lined up! It is just so pretty! :)

Courtney- I will have to try the Sure Jell. Thanks for the tip! By the way, have you had a Honey-Dew for me from your little market? I was thinking about it the other day! I NEED to come to Washington!

Jess- If you haven't been to the Sun Valley area you really should come up! It is amazing and so different from most of Idaho. It is beautiful and pretty relaxed. I think you guys would REALLY like it!

Brenda- I thought about Splenda too, but you can't use it. It wouldn't set up. I think the Sure-Jell that Courtney suggested would probably be best. I looked at the store and they have other types of no/low sugar pectin. You could probably google it too!
