{MONDAY'S MENU} Salad

Last week while Ryan was out of town there was just NO WAY I was going to spend my evenings over a hot stove! SO...thanks so much to Jeni & Carrie for the inspiration and the fabulous salad on Sunday.....this is what I made! I made one GIGANTIC bowl of it and when I got hungry I would just serve myself up a bit! YUMMY!

SALAD (original, I know!)


INGREDIENTS:Any kind of lettuce or spinach (I used iceberg...not my fave, but I couldn't find any good spinach)
Then, just load it up with whatever the heck you want! I used raw sunflower seeds, cucumber, carrots, raisins (currants are better), whole grain pasta (A MUST), shoe string beets (if you like canned beets Albertson's brand is as close as you are going to come to Grandma's recipe! They are delicious!) & whole grain croutons.


WHAT DID I COVER ALL THIS YUMMINESS WITH....Ken's Asian Sesame of course! Thanks so much to Carrie and I guess ultimately Diane, who introduced this FABULOUS dressing to Carrie, who shared it with me! I LOVE IT! I am TOTALLY not a vinagerette type person, but most times Salad defeats it's purpose when it is drowning in a creamy dressing. This is the PERFECT alternative! It has such an amazing flavor and a bit of a zing! Between the cool crunch of the salad and this dressing, it is sure to satisfy! I found it at Albertsons, in case you wanted to try it yourself!
