MONDAY'S MENU {Fried Ice Cream}


This recipe comes from hands down the best cook (although this recipe requires ZERO cooking) EVER....my Mom!

I can't even begin to tell you how absolutely DELISH this is! It is certainly a crowd pleaser! AND it is one of the easiest things in the world to make! So let's get to it!

FRIED ICE CREAM

In a bowl combine:
  • 6 c. or more of Cornflakes (you can smash these if you want)
  • 1/2 to 1 c Slivered Almonds
  • 1 c. Melted Butter
  • 1 1/4 c Brown Sugar
  • 1 c. Coconut

Spread 1/2 of that mixture evenly into the bottom of a 9x13 pan.  


Slightly soften a 1/2 gallon of Vanilla Ice Cream. Spoon entire thing onto Corn Flake mixture. Cover as much as possible.


Softly spread the ice cream to the edges of the pan. Try to make it as smooth as possible, but be careful cause that yummy Corn Flake stuff likes to make the job a bit difficult by not staying put.


Cover with the remaining 1/2 of the Cornflake Mixture.

Place in the freezer to let it harden up a bit and keep it there until it is time to serve.

Drizzle with caramel, hot fudge or fresh or mashed fruit.

It is divine! I AM WARNING YOU! :)

I had this years ago--I think at Darylene Nickels home (Keri's Mom).I remember it being delicious. It just might be Fathers Day Dessert with homemade hot fudge. Thanks Amy for the reminder. Have a wonderful week!
