HOMEMADE PESTO
First you will need 2 c. fresh Basil leaves. Can I tell you that I would buy this stuff and keep it in my fridge just to be able to smell it?! It is divine!
4 cloves of garlic, minced.
I just love when they come all "shucked" and individually wrapped packages. It makes my heart sing!
By the way Ry I think there are many that would like to see the results of your wintery cold backpacking trip. Don't forget the vid of you jumping into the FREEZING lake! PLEASE!
Oh yeah, back to the Pesto! Doesn't that look well....gross, but it isn't I promise. It is delish! Full of flavor and smells OH SO GOOD! Now just chuck it all in a blender and blend until smooth.
This blender is my hubby's baby. Did you know you can make ice cream in this sucker?! Apple pie flavored. It is amazing! Seriously! I will have to have a cameo appearance by the man that makes my eyes twinkle. I am sure he wouldn't mind showing you how to do it. 1/4 c. Olive Oil or EVOO as my friend Rachel would say.
1/2 c. pinenuts....mmmm pinenuts!

Mmm, I love pesto. And this is why you need to move here, because I'll never make it myself! Oh, and pre-peeled garlic? I've never heard of such a wonderous thing! I would use it twice as much!
I got pesto pasta at a restaurant a few weeks ago and it was WAY too much! Olive oil drowning my entire plate...yours (or Brooke's) looks WAY better than the one I ate! Maybe YOU should open a restaurant...
I can't believe you have time to cook and post about it.
