{MONDAY'S MENU} Eclairs

Oh and is this one ever a beauty! Oh my friends, you will all love me AT LEAST twice as much by the end of this post, then at least DOUBLE that once you have tried these! YUH-MEEE! I got this recipe from my sister in law JoJo many years ago. She told me that they are easier than chocolate chip cookies, and believe it or not...THEY ARE! So enjoy!

ECLAIRS


PASTRY INGREDIENTS:
1/2 c. butter
1 c. water
1 c. flour
4 eggs (room temperature)

PASTRY DIRECTIONS:
1.
Boil butter and water in saucepan.
2.Pour into glass bowl. Add flour and mix.
3.Put in microwave for 30 seconds, remove and stir, microwave again for 30 seconds.
4.Add eggs and beat until creamy.
5.Spoon onto very lightly sprayed cookie sheet. (I will usually wet my fingers a little and form them just a little)
Makes 12 large or 24 small (or however you want to do it).

6. Bake 30 minutes @400 degrees or until golden brown. Start watching them at about 23 min.
7. Now is where they might try to get tempermental. Turn off oven and crack door and let cool. Do not remove until cooled. If they cool to quickly they will collapse. Don't let them collapse. If you start to see them fall close the door for a second.


Now let's make them look like this! Mmmmm!

FILLING INGREDIENTS:Vanilla Pudding Mix (Large Box)
1/2 c. Milk
2 c. Cool Whip
1 T. Sugar

FILLING DIRECTIONS:
1.
Make pudding according to directions on box using only 11/2 cup milk. Put in Fridge.
2.Mix cool whip and sugar until stiff.
3.Stir into pudding.
4. Put pudding into a cake decorating bag and use fill puffs.
5.Then you will frost the tops of them. Use Duncan Hines "HOMESTLYE CREAMY MILK CHOCOLATE" frosting. It is the PERFECT frosting for these puppies!
6. Now put them in the fridge for about 2 hours before serving. They MUST be cold!
7. Enjoy!
